According to legend, Roquefort was created over 2000 years ago, when a shepherd dropped his sandwich that was filled with Ewe’s Cheese, in a cave to chase after a love interest. A few days later, he remembered his sandwich and discovered that it had grown mould on it! This did not deter him and upon tasting it, realised it was delicious and Roquefort was born!
Thanks to this Shepherd, farmers continue to mature Roquefort in Limestone Caves in Cambalou, wanting to avoid the use of chemicals and other equipment that could potentially disturb the balance of flavours in Roquefort. Ewe’s milk is used, thanks to it’s rich and flavoursome milk. Quite a wet Cheese, this is a fantatic French Cheese and one of the greats. Spicy, creamy with a strong Blue taste, Roquefort is not for the mild Cheese lovers!
