The Wine:

Brut Réserve NV is a blend of 40% Pinot Meunier and 30% each of Pinot Noir and Chardonnay. It contains 50-60% reserve wines and is aged for 30 months on lees. Ideal as an aperitif it has a very light and harmonious pour, made from a blend of Pinot Noir, Meunier and Chardonnay three different years and sourced from the best sites in the Champagne region.

It has a distinct and precise intensity with refined aromas and uplifting freshness. The wine has a delicate texture in the mouth, structured around fleshy fruit flavours (apples, crunchy pears) and serves perfectly both as an aperitif and alongside light dishes such as a seafood platter

Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Champagne Billecart-Salmon is still a family-run organisation with seventh generation Mathieu Roland-Billecart today overseeing business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong “tasting committee” along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart. By 2020 production had expanded with grapes now coming from 100 hectares of their own vineyards and 200 hectares of managed vineyards from 40 crus mostly within 20 kms of the winery. In 2017 they attained certification High Environmental Value and from 2020 are herbicide free and currently 10 ha are in organic conversion.

The production secrets and the vinification method of Billecart-Salmon Rosé date back to the origins of the house and have been passed down seven generations, ensuring consistent quality throughout the ages. Approximately a tenth of the Pinot Noir in the blend is vinified as red wine. All the wine is fermented in stainless steel with no oak contact so you have that bright fresh red fruit characteristic and hints of the smokey character from the reductive winemaking.
